    Taking stevia extracts further in NPD

    03 Aug 2018 At IFT in Chicago last month, FoodIngredientsFirst spoke with Mel Jackson from Sweet Green Fields. The company has been working to develop their stevia extracts in NPD. Jackson says: “We’ve been studying various steviol glycosides to understand how they react in the mouth and we have been able to come up with stevia composition that will give a much more sugar like mouthfeel. We have also been able to achieve 80, 90 and 100 percent sugar reduced beverages. The acceptance of stevia is growing, now we are able to look at dairy-based beverages and what we can do with stevia extracts in those types of applications. We are very optimistic going forward – we are getting better at making stevia extracts more like sugar so there is plenty of scope for innovation.”
