It’s crunch time for insects?
As the world’s population continues to bulge, the issue of food security is a hot topic in the food industry, particularly in terms of meeting the challenges of providing protein, which is where insects come in. Insects were firmly on the menu in 2017, with Switzerland’s second-largest supermarket chain, Coop, selling insect burgers for human consumption. Start-up firm Bugfoundation launched locally produced insect burgers in the Netherlands and Belgium. Later in the year, studies saw industry players turning to insects to address the protein shortfall. UK-based Stefan Gates, who recently wrote a book on the topic, spoke to FoodIngredientsFirst about edible insects.
