13 May 2016 --- A new lustre popping candy inclusion from Pecan Deluxe Candy (Europe) Ltd will be giving bakery and dessert products a golden shimmer over the next few months, providing visual excitement as well as an intense mouthfeel sensation.

The new milk chocolate coated popping candy finished with a gold or red metallic sheen is the latest addition to the company’s impressive range of inclusions, perfect for bakery, chilled and frozen desserts including ice cream – and even cocktail drinks. Lustre popping candy can be supplied in various bag sizes and bulk options, and it is available in a choice of inpidual 3mm pieces or ‘multi-pop’ clusters’.

Popping candy is on a roll within food manufacturing and catering markets. Available from Pecan Deluxe in numerous other variants as well as gold lustre, popping candy is perfect for frozen and chilled desserts, both as an inclusion and as decoration, providing exciting mouthfeel and taste sensation across practically any product. It is stable in use whether frozen, chilled or at ambient temperature.

As well as desserts, popping candy is ideal for bakery toppings: the pips and clusters are fat or chocolate coated to keep moisture out so they retain their “pop-ability” in various food applications. The cereals and snacks sector is also showing significant interest in popping candy, with clusters a popular choice to liven up old favorites on retailers’ shelves. Even the beverages market is paying attention with popping candy showing up in innovative new cream-based cocktail offerings in fashionable bars across Europe.

Led by premium high street retailers, the popularity of lustred food ingredients such as gold shimmers and dustings is also on the rise. No longer considered as solely a special occasion inclusion, gold and other lustre toppings and ingredients are helping to turn mainstream bakery and dessert foodstuffs into premium items – which of course command a premium price.

Pecan Deluxe’s managing director, Graham Kingston, explained: “Thanks to Pecan Deluxe’s continuing investment in product development, a wide range of food manufacturers and caterers can now benefit from our latest exciting innovation. The key for this sector is to provide a luxury experience that can be positioned at a more profitable price point, thus improving margins – and specifying gold lustre popping candy is one simple and very effective way of achieving that.

“We’re opening up exciting new opportunities with our popping candy range in ice cream, desserts, bakery and cereals – all markets with massive potential to introduce innovative new variants to provide the optimum taste and mouthfeel experience for consumers. Luxury toppings and inclusions are here to stay and we envisage significant growth in demand for our lustre popping candy during 2016 and 2017.”

Pecan Deluxe is now one of the biggest European suppliers of cookie dough pieces in a range of sizes, which feature in many household name premium ice creams as well as QSR and gastro-pub desserts. All Pecan Deluxe products – ranging from sugar sprinkles and chocolate pieces to brownie chunks and pralines – are made using natural colors and flavorings in segregated facilities, and the company is constantly innovating to meet demand from a growing number of manufacturers for new flavor and texture options.
