Unicorn Grain Launches New Product Development: BiTex Tenderness
18 May 2017 --- Unicorn Grain Specialties B.V., based in Weert the Netherlands, have announced its latest innovative addition to its BiTex functional flour range: BiTex Tenderness. This newest addition is useable for bread and brings improved texture (freshness), shelf life and is also very cost effective.
Unicorn Grain is a leading specialist in the processing of grains, seeds and pulses into various applications in the fields food production, eco-organic, health food and traditional food markets. Unicorn has its own ‘Texture Map’ where they mapped out all the different texture descriptors allowing them to identify and create successful texture profiles. With their existing BiTex range they are able to customize texture based on natural ingredients.
The new BiTex Tenderness improves the softness of your bread up to 15% and does not interfere with the bread volume. Furthermore is the use of BiTex Tenderness cost efficient while it improves the water absorption. And last but not least: it is clean label: no E-numbers and non GMO.
FoodIngredientsFirst recently caught up with Unicorn’s commercial director René Coenen who said: “We see trends in the market such as natural, clean label, health & wellness, protein fortification, and of course the rising demand for protein enriched foods like snacks for example.”
“We have a BiTex production line here that is based on the protein enriched process, and we are currently working on a wider program of heat treated pulse flour,” he adds. The BiTex line is relatively new, with Unicorn starting to use the trademark name for its functional flour at the beginning of 2017.
