IBA 2018: Digitalization in processing, tradition in formulation

Superbread and “customized bread” – is this what the baking industry will look like in 2030? International Bakery Fair (IBA), which was held in Munich (Germany), offered insight into exciting new products and upcoming trends. The industry is changing as a result of digitization and automation, evolving eating habits and consumer wishes, the increasing mobility of the population, new sales concepts, and a trend towards special, individual, and high-quality products. The show brought together the industry’s latest innovations: from production technology to raw materials, from food trends to business concepts and shop fitting. A decisive factor here is digitization as it opens up new possibilities for bakers and confectioners. For example, raw materials and ingredients can be weighed automatically, machines networked or ovens loaded and cleaned automatically. The employees in the bakery can, therefore, focus on nothing but the essential: baking.
