Fermented foods enjoy a renaissance

Fermented foods are enjoying an NPD resurgence amid the clean label trend. Kefir is appearing to buck the trend of slowing NPD in the dairy drink space. Suppliers are boosting their investment in fermentation facilities. In September, Kerry invested US$28.6 million in a US facility in to strengthen its fermented ingredient position and increase manufacturing capacity for naturally-derived fermented ingredients. Later in the year, DSM acquired a state-of-the-art fermentation facility in Brazil from Amyris, enhancing its presence in fermented ingredients.
